Spicy Creamed Spinach
2 TBSP butter
1 TBSP olive oil
2 cloves garlic, minced
1 medium onion, minced
1 large container of spinach (16 ounces) -- chopped
1 teaspoon red crushed pepper flakes
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 jalapeño pepper
1/2 cup heavy cream
1/4 cup freshly grated parmessan cheese
- In a deep pot, in medium heat, melt the butter and add the olive oil.
- Sauté the onion until soft then add the garlic, jalapeño pepper and red crushed pepper. Saute for few minutes.
- Add the chopped spinach. Mix and turn the spinach until all leaves are tender.
- Add the rest of the ingredients and mix well. Cook together and let the cream reduce until about half of the cream remains.
- OPTIONAL: you can add bits of fresh bacon, ham, or chicken.
